Savory

It’s a very leafy plant, with narrow and sharp leaves, and the flowers are white. We can find it in calcareous terrains. We use the leaves and the flowering tops.

Its aroma come from the numerous vesicles that there are in this plant’s leaves, and each of them have different essences, which is what make the savory’s intense aroma. The raw leaves’ taste is slightly spicy.

Its biggest component is the essential oil, inside which we can find monoterpenes, carvacrol and timol.
